Texture Analysis in Research: Incorporation of Insects as Ingredients in the Bakery Industry

Back in December 2019, Roberts Bakery in Norwich were the first UK bakery to launch a loaf of bread containing cricket flour. The uptake from other bakeries has been slow in the UK; customers will take some convincing before they overcome their trepidation to eat insects. However, it is likely that insects will become a regular part of our diets in years to come.

Insects such as crickets provide a protein source with a high feed-conversion efficiency rate (an animal's capacity to convert feed into increased body mass). They also require much less water than traditional protein sources such as poultry or cattle. Health benefits of insect consumption include their high antioxidant power and chitinous fibre content, as well as the upside of a higher protein content in whichever food they are added to. The challenge lies in introducing insect protein into the Western diet. This has to begin with ingredient replacement in existing foods, one example of which is bakery products, as these act to familiarise consumers with insect-based food.

Across the globe, consumers are increasingly looking for non-meat options when buying protein as part of their diet.  
 
Meat has been the main source of protein in developed markets for years. However, a change in consumer behaviour has led to a growth in the alternative proteins market due to health concerns, environmental reasons and animal welfare awareness. Consequently, producers of animal protein face large risks to their sustainability if they do not join the innovative and fast growing alternative proteins market. Meat alternatives and broader protein alternatives that can act as substitutes for traditional meat products are attracting considerable financial investment.

‘Alternative proteins’ is a general term that covers any substitute to traditional animal protein. These protein sources include plant-based protein, fermented protein, algae, cultured meat, 3D printed meat and insects. The texture of traditional meat has always been the most important factor in determining consumer acceptance, and the same is true for alternative protein sources.

According to Food Technology magazine, “It’s relatively easy to predict what consumers will be eating within a few years but what about further ahead?

"This is the million-dollar question keeping the food and beverage industry on its toes. Will our diets evolve into the realms of science fiction?

"Based on what we know now, food shortages will be a growing issue, so many will be looking to new sources of nutrition. Because of this, experts believe diets will be based on protein-rich insects and nutrient-dense algae, both of which could offer sustainable alternatives to resource-intensive farming.”

Cricket powderWith 9.6 billion people forecast to inhabit the planet in 2050, scientists have warned that population growth could lead to an unsustainable increase in food production if consumption patterns persist. 

Considering the rising world population and the scarce water and land resources, it is extremely important to find new and sustainable ways to produce food. Edible insects are particularly interesting due to their high protein content and lower environmental impacts compared to traditional livestock. They have been promoted as a source of nutrients able to contribute to the increasing need of animal protein in an environmentally sustainable fashion. In general, insects contain a considerable amount of protein with a well-balanced amino acid spectrum, a high amount of lipid, and a noteworthy content of micronutrients such as copper, zinc, and iron.

The meat substitutes market size is estimated to be worth 9.25 Billion USD by 2023.

Consuming meat for many is a part of their daily life, but the majority are opting for a healthy version by switching to non-meat foods for catering to their protein needs. 

Avoiding or restricting meat in the diet may be challenging, yet with the nutritional, environmental and health benefits of selecting meat substitutes over meat, this challenge will be worth the effort.

How a sliced meat or meat substitute holds together is an important textural expectation of the consumer. The binding characteristics of the sliced product can be greatly affected by its formulation and processing thus affecting its tensile strength.


Whilst tensile grips or pneumatic grips are the traditional choice for tensile testing there are alternatives for a soft and thin product such as sliced meat. A Film Support Rig (shown in Figure 16) is designed to hold small amounts of thin or film-like material in a drum configuration in order to measure the biextensional properties of the films using a puncture test.

Multiple puncture probe - meatball testDespite the simplicity of penetration tests when faced with a non-homogeneous product, penetration is highly compromised as a smaller surface area for measurement is also more sensitive to variations in sample structure and low reproducibility and misleading data is obtained. 

Results may show a wide variance between maximum and minimum forces depending on whether the probe meets with, for example, internal structure variation such as is usually present in meat products.

More and more often paté is being eaten as a snack spread onto toast, bread or crackers. It is usually made by pre-cooking liver and other meats, mixing them with other ingredients, seasoning and then filling into moulds or casings. 


There are many variations as a result of using different ingredients and nowadays low fat paté is also an option. There are of course vegetarian alternatives which, more often than not, contain vegetables rather than a meat substitute.

Empirical methods of assessing texture are often challenged by lack of homogeneity or uniformity in samples. 

Heterogeneous systems, such as unprocessed meat products can have structural elements that can vary considerably for the same overall chemical composition. Sometimes the sample to be analysed may be of variable configuration or structure from piece to piece such as for chicken strips.

For the testing of circular samples, the Warner-Bratzler Blade (as shown in Figure 4) is recommended, as it provides a larger cutting surface around the product at the start of the test by means of its triangular notch in the middle of the blade. 


With a slotted base insert, the knife is able to cut through the entire sausage providing a crude method with little sample preparation which lends itself ideally to quick quality determination. It is the most common biting or shearing system for the assessment of meat and meat products.

MeatballsAs whole tissue, meat is a natural product that possesses inherent variability due to many factors. As a sample for testing this can present a common problem to assess the texture repeatably. 

Processed meats are of three general types: deli-styles (for example turkey, bologna), that are sliced; formed meats (meat balls, meat patties, chicken patties, chicken nuggets); and sausage-style meats, which are usually tubular shaped. Processed meats are often investigated to assess, for instance, ideal combinations of ingredients, evaluate contribution of processing methods/times and highlight quality inconsistencies.

Across the country, people are choosing to eat less meat for the health of their bodies and the planet, whether for one meatless day per week or a lifetime. 

The ‘fake meat’ business has been around for decades, but it has not quite taken off due to price or down to visual, textural or flavour failure. However, the meat-fakers say they are on the verge of a breakthrough, that there is a real possibility that a new era of fake meat – nutritious, cheap and indistinguishable from the real thing, made either of synthesised animal tissue or derived from plant material – may be upon us.

Perhaps the easiest of meat products to recreate is the burger or “pattie” as it can take a combination of ingredients in bulk and form a structural mass that attempts to mimic a burger with dense mouthfeel. 

The use of quinoa, brown rice, bulgur and vegetables can be successfully combined as a fibre-rich patty with the texture of a meat burger.
